1 box Uncle Ben's long grain & wild rice
2-3 chicken , diced
4 green onions, chopped
1 diced red pepper
3 oz. chinese pea pods, chopped (trim ends)
1-2 med avacados
1 c. chopped pecans

1/3 c. oil
1/3 c. seasoned rice vinigar
1/2 tsp. salt
1/2 tsp. sugar
lemon juice
1/4 tsp. garlic powder
1 T. dejon mustard

Cook rice acording to package directions. Seasonings are included. Cool.
Mix chicken, onions, red pepper and pea pods. Add to cooled rice. About 2-4 hours before serving add chopped avacados, and pecans.

Mix together and shake in bottle. Serve cold over salad.
