1 tbsp. Butter
4 Eggs (separate) use only Yolks
1/3 cup Non-Sugar Sweetener (like Erythritol)
1/2 cup Unsweetened Coconut Flakes
1 cup mixture of Chopped Nuts (Walnuts, Almonds, Pecans) you choose the combination.
2/3 cup Sugar-Free Chocolate Chips

Preheat oven to 350º
Cover cookie sheet with Parchment Paper or Silicone Baking Sheet.

In medium sized glass mixing bowl, melt butter in the microwave.
Add egg yolks, and whisk after each one
Mix in all other ingredients, dough will be very stiff.
Refrigerate for 30-45 minutes

Divide dough into 12 cookies and bake for 14 minutes, or until lightly browned.

**If you didn't fully separate egg yokes from whites, there will be some egg white run-off around cookies, just trim it off. Does not effect taste, more for aesthetics.
