2 cups chopped of very coarsely grated apples 1 cup flour 1 cup sugar 1 teaspoon baking SODA (not baking powder) 1 teaspoon cinnamon at least 1 teaspoon nutmeg 1/4 cup oil 1 egg slightly beaten 3/4 teaspoon salt 1 cup raisins (makes it even better)
Mix all ingredients together, and bake in 9x9 inch baking dish at 350 degrees for 35 minutes. Serve warm with whipping cream, or not. Makes great muffins too.
