1 egg per person
1 cup milk per person
1/2 cup flour per person
1/4 salt per person

Directions:
Directions:
Mix all ingredients together. It should make a thin batter. You may need to add a little more milk or flour to get it to a consistency of….runny gravy?
Butter a hot small skillet and pour in about 1/3 cup of batter. Pick up the skillet and rotate until the bottom is covered evenly. Cook until it starts to cook through. Then turn with a pancake turner, and cook other side. They cook quite quickly.
Put butter and jam down the middle and roll up. Cut off slices with your fork and enjoy.
My brother, Rex is quite the expert at cooking these. He can keep four little skillets going at a time, and not miss a beat. He often cooks them for the 50 of us at family reunions. He also cooks them every week for all of the orphanage volunteers in Ecuador.
When I was little we always ate them with butter and jam, and sometimes butter and plain sugar. But Rex makes quite a gourmet smorgasbord out of them now: cream cheese and jam, grated cheese and salsa, powdered sugar and lemon juice, sliced fresh fruit, et

This is an old recipe that my grandfather used to make all of the time. He was taught it by his mother, who was taught by her mother who was taught by her mother, etc.
