Ingredients: COOKIES ¾ cup butter, softened ⅓ cup confectioners' sugar 1 tsp lemon juice 1¼ cups all-purpose flour ½ cup cornstarch
FROSTING ¼ cup butter, softened ¾ cup confectioners' sugar 1 tsp lemon zest, grated 1 tsp lemon juice 1 to 3 drops yellow food coloring, optional
SERVING SUGGESTION (optional) warm preserves (raspberry, strawberry, or blueberry) as "dipping sauce"
Tools 3 bowls, small electric mixer whisk plastic wrap working space to shape dough (i.e., large cutting board) 2 baking sheets, ungreased wire racks grater (for making zest)

Directions:In bowl, beat butter and confectioners' sugar until blended.
Beat in lemon juice.
In separate bowl, whisk flour and cornstarch; gradually beat into butter mixture.
Divide dough in half; shape each into an 8" long roll.
Wrap in plastic; refrigerate 2 hours or until firm.
Preheat oven to 350°.
Unwrap and cut dough crosswise into ¼" slices.
Place 2" apart on baking sheets.
Bake 8-12 minutes or until firm.
Remove from pans to wire racks to cool completely.
For frosting, in bowl, beat butter and confectioners' sugar until smooth.
Beat in lemon zest, lemon juice and, if desired, food coloring.
Spread over cookies.
Serve with preserve dipping sauce (if desired). |
