3 C all-purpose flour 1 t soda 2 C sugar 1 t salt 3 eggs well-beaten 1 t cinnamon 1 C chopped nuts 2 t vanilla or 1/4 c rum Handful of coconut 1 8 oz.can crushed & drained pineapple 2 C mashed ripe bananas
Combine dry ingredients then stir in nuts. Set aside. Combine remaining ingredients then add to dry ingredients. Stir until just moist. Spoon into 2 greased 9x5x3"loaf pans. Bake at 350º for 1 hour or until done.
