1 lb ground beef
onion
3 med. zucchini
rotel
2 med tomatoes
1 bouillon cube
salt & pepper to taste
1 c cooked rice

Directions:
Directions:
Brown ground meat in large skillet with salt, peper & onions. Dissolve bouillon cube in 1 c hot water. Add broth, rotel, tomatoes and zucchini and cover for about 5 minutes. Add cooked rice. Stir. Quick & easy!
