2 c.s boiling water
1 c. long grain rice.
Cook rice 5 minutes. Drain.

1 quart milk,scalded
tsp. salt.
2-3 tsp. vanilla
3 Tbsp. sugar.
1 pint heavy shipping cream

CHERRY-RASPBERRY SAUCE

1 package frozen raspberries, thawed
1 can (1 lb.) Cherries
2 Tbsp. sugar
4 tsp. corn starch

Directions:
Directions:
Mix 2 cups boiling water and 1 cup long grain rice. Cook 5 minutes. Drain thoroughly.
Heat 1 quart milk to scalding, add salt. Stir into rice, lower heat and stir constantly for 5 minutes. Cover and simmer 45 minutes, stirring occasionally, until milk is almost absorbed and rice is tender and creamy. Stir in vanilla and sugar. Chill in refrigerator - overnight.
Whip 1 pint heavy shipping cream and add to rice mixture. Garnish with cherry-raspberry sauce.

CHERRY-RASPBERRY SAUCE
Drain syrup from cherries and raspberries into 2 cup measure. Should have 1 1/3 cup fruit juice. Combine sugar and cornstarch and combine in juice. Heat until mixture thickens. Cool slightly, stir in fruit. Serve slightly warm or cool over rice.

I use frozen pie cherries and raspberries to make the sauce.
