2 c. - cheddar cheese, shredded (8 oz.)
1 (4 oz.) can - green chiles, diced
c. - whole kernel corn
c. - green onion, sliced (about 2)
10 (6 inch) - fajita-size flour tortillas
salsa
chopped fresh cilantro (optional)

Directions:
Directions:
Combine cheese, chiles, corn and green onion in medium bowl. Spread 1/3 cup cheese mixture onto one half of each tortilla. Fold tortilla in half. Spray large skillet with non-stick cooking spray; place two quesadillas in skillet. Cook each side over medium-high heat until golden brown and cheese is melted. Repeat with remaining ingredients. Cut each tortilla in half. Serve with salsa or cilantro. Makes 10 servings.
