1c. acini pepepe
1 lg. can crushed pineapple
1 lg. pkg. lemon pudding(not instant),
1 c. sugar,
2 eggs,
2 c mini marshmallows,
2 cans mandarin oranges,
1 c. coconut,
10 ounces coolwhip,
1 jar marachino cherries

Directions:
Directions:
Day 1- Boil macaroni(acini) 45 min in plenty of water. Drain. Drain juice from pineapple then add enough water to make 1 3/4 liquid. Cook lemon pudding using 1 c. sugar 2 slightly beaten eggs and pineapple-water mix. Continue cooking until thick and pour over macaroni. Refrigerate and let stand overnight.
Day 2-Add coolwhip,marshmallows,oranges,coconut and cherries. Stir to mix well and chill for several hours.

Makes a large quantity. I make it for big family gatherings. The acini pepepe is in the pasta aisle.
