1 Batch:

6 Egg Yolks
6 T. ½ & ½
4 T. Sugar
1 T. Melted Butter
1 heaping tsp. Cardamom
2 C. Flour

7 Batches: (this is about 6 gallon size bags of cookies)

42 Egg Yolks
1 Quart ½ & ½
2 C. Sugar
7 T. Melted Butter
7 heaping tsp. Cardamom
12 C. Flour

Directions:
Mix first 5 ingredients together in mixer and add 4 C. Flour then put batter in another large bowl and fold in remaining flour. Dough will be extremely sticky so take a large handful or two and put on a floured cutting board and roll it until you can cut through dough with pastry or pizza cutter without it sticking to board & roll out about a ¼ inch thick. Then cut into strips & put a cut in the middle of strip and put one end in cut hole & lightly pull through. Then cook in deep fat fryer until a nice golden brown.
