1 ½ cups All purpose flour
1 tsp baking soda
½ tsp salt or a little less if using salted butter
¼ tsp ground nutmeg

2 sticks of butter softened
½ cup of firmly packed light brown sugar
½ cup of firmly packed dark brown sugar
½ cup of granulated sugar

2 eggs
1 ½ tsp pure vanilla extract

3 cups old fashioned oats (not quick)
1 cup of ground coconut (use processor if you only have flaked-sweetened)
1 cup of chopped walnuts

Directions:
Directions:
Preheat oven to 350º F. Line cookie sheet with parchment paper.

Mix the first four ingredients into a small bowl and set aside

Cream butter and sugars, then add eggs and vanilla.

Add in flour mixture then mix remaining dry ingredients (use of a strong mixer helps)

Scoop balls of dough about the size of a ping pong ball spaced about 2 inches apart.

Bake for approximately 11 minutes, give or take.

Sometimes I process unsweetened coconut flakes along with sweetened. You can also add a bit of white chocolate chips and dried cranberries, or chocolate chips. Have fun playing with this recipe.
