2 Tbls olive oil
1 red pepper, finely chopped
3 green onions, sliced
2 Tbls mayonnaise
1 Tbls lemon juice
1 egg
1 egg white
1 tsp Dijon mustard
2 cups fresh bread crumbs
8 oz. crab meat
1/2 cup dry bread crumbs

Directions:
Directions:
In a skillet, heat 1/2 Tbls oil, red pepper, and green onion for about 4 minutes. Remove from heat.
Whisk together mayonnaise, lemon juice, egg, egg whites, and mustard, then add sauted vegetables, fresh bread crumbs and crab. Place dry bread crumbs in a plate. Shape crab mixture into 8 patties, using about 1/2 cup for each. Coat both sides of patties with crumbs. Heat half of remaining oil and cook crab cakes for 5 minutes, flip over, add remaining oil and cook another 5 minutes on this side, or until crispy brown. Serve with lemon wedges and tartar sauce.
