1 1/4 cups All-Purpose flour
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. salt
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 tsp. vanilla
3 cups quick cooking or old-fashioned Oatmeal
1 2/3 cups butterscotch morsels
Add nut pieces, if desired.

Combine flour, cinnamon, salt and soda in a small bowl (using a whisk to mix). Set aside.Mix butter (or margarine), sugars, vanilla ( or option: grated orange peel) in a medium to large bowl until creamy. Add eggs, one at a time and mix well. Add flour mixture and blend well. Mix in butterscotch morsels and nut pieces (if desired).

Bake on ungreased baking sheets at 375 degrees for 7 to 8 minutes for chewy cookies and 9 to 11 minutes for a crispier cookie. Ovens vary.
