1 cube butter
6 Tblsp sugar
juice of 2 lemons
2 eggs, slightly beaten

Directions:
Directions:
Place butter and sugar in a double boiler, cook until sugar dissolves. Add lemon juice and then slowly add the eggs. Cook for approximately 30 minutes or until thickened. Make your favorite pie crust. Place pie crust rounds in a muffin tin and put 1 tsp of mixture in the bottom of each crust and bake at 400 for approx 10 minutes. Cool and fill each crust with remaining lemon mixture.
