2 medium peeled potatoes (preferably red potatoes)
2 Tbsp mayonnaise
1/4 Tsp dry mustard
3/4 Tsp grated lemon rind
1 1/2 Tsp lemon juice
1/8 Tsp salt
1/8 Tsp hot pepper sauce
2 egg whites lightly beaten
3 Tbsp minced parsley
2 Tbsp chopped celery
1 Tbsp chopped onions
1/2 lb crab meat cooked & shredded into small pieces
1/2 cup italian style breadcrumbs

Directions:
Coarsely shred the potatoes. Combine the next 7 ingredients & stir. Add the shredded potato, parsley, celery, onions & crab meat and stir well. Shape into 1/2" patties. Dredge the patties in the breadcrumbs. Heat 1 Tsp oil in a skillet over medium heat. Cook patties for 3 minutes, turn and cook for 3 additional minutes or until they are golden brown.
