4 - 6 oz tilapia fillets
1/4 Tsp salt
3 Tsp butter, diced
1 lb sliced fresh mushrooms
1/8 Tsp black pepper
2 Tbsp dry sherry or chicken broth
2/3 cups chicken broth
1/4 cup milk
1 Tsp cornstarch

Directions:
Directions:
Sprinkle salt over fillets. Melt 1 1/2 tsp butter in a large non stick skillet. Use medium high heat. Add fillets and cook 4 minutes on each side. Remove fillets from skillet and keep warm. Melt remaining butter and salt, add mushrooms and black pepper. Cook 4 minutes, don't burn. Add sherry and cook 30 seconds, stirring constantly. In small mixing bowl, whisk together chicken broth, milk and cornstarch. Add mixture to skillet and bring to a boil, stirring constantly. Reduce heat and cook 1 minute. Spoon sauce over tilapia fillets. Serve with lemon wedges.
