2 lb boneless pork loin roast 2/3 cup maple syrup 3 Tbsp dijon style mustard 2 Tbsp cider vinegar 2 Tbsp soy sauce salt and pepper to taste
Stir together syrup, mustard, vinegar, soy sauce and salt & ground pepper. Spread evenly over pork roast and place in shallow pan. Roast pork in a 350 degree oven until internal temperature with a meat thermometer, reaches 160 degrees. This will be approximately 45 minutes to 1 1/2 hours depending on thickness of roast. Remove roast from oven and let sit for 10 minutes before slicing.
