3 cups old fashioned rolled oats
1/3 cup whole wheat flour
1 t baking soda
1 t baking powder
1/2 t salt
1 cup packed light brown sugar
1 cup white sugar
8 oz. (2 sticks) unsalted butter, softened
1/2 cup natural peanut butter
2 large eggs
1 t vanilla
2 cups salted peanuts
2 cups semi-sweet chocolate chips (your choice)

Preheat oven to 350 degrees.
In large bowl, stir together oats, flour, baking soda and salt; set aside.

Put brown and granulated sugars, butter and peanut butter in bowl of electric mixer fitted with paddle attachment. (I use my Cuisinart.) Mix on medium speed until pale and fluffy, about 5 minutes. Mix in eggs and vanilla, scraping bowl as needed.

Reduce speed to low. Add oat mixture until just combined. By hand, mix in peanuts and chocolate chips.

Using small ice cream scoop (1 T size), make balls of dough and place them 2 inches apart on parchment lined baking sheet. (I didn't find this was necessary.)

Bake until cookies are golden brown and just set, 13 to 15 minutes. Cool briefly on sheet before transferring to wire racks to cool completely.
