Dressing:
1/4 c. vinegar
1/4 c. sugar
1/4 tsp. salt & pepper
1 to 2 tsp. prepared mustard
2 eggs, beaten
1 c. salad dressing (Miracle Whip Light is fine)

2 to 3 lbs. boiled, cubed potatoes, cooled
2 hard boiled egges, chopped
1 to 2 T. onion, chopped

For Large Quantity
Dressing:
1 c. each vinegar, water & sugar
1 to 2 T. prepared mustard
1 tsp. salt & 1/2 tsp. pepper
5 beaten eggs
2 to 3 c. salad dressing

10 lbs. cooked, cubed potatoes
6 hard boiled eggs
1/2 c. onion

Directions:
Directions:
Combine all ingredients for dressing up to eggs. Cook to boiling. Reduce heat & gradually add the beaten eggs. Cook slowly, about 5 minutes until thick. Cool & add salad dressing. Set aside.

Put cubed potatoes and chopped hard boiled eggs in large bowl with onion. Mix with dressing. Chill. Adjust seasoning if necessary.
