Blend cinnamon and applesauce in a large bowl.
Knead into a ball. It should have the consistency of
thick cookie dough and should roll out easily without
cracking; if too thick, add more applesauce, a teaspoon
at a time.
Next, divide dough in half and roll each section into a 1/
4 in.c thick, 10 in. diameter round; if dough sticks,
sprinkle some cinnamon onto your work surface. Cut
shapes with cookie cutters or a knife. Punch near the
top of each of ribbon. Slip onto baking sheet and bake
in a 200 degree oven 20-30 minutes, checking
occasionally; if ornaments cook too long, edges curl.
Remove and cool.
To decorate, accent with acrylics. Thread ribbon
through holes for hanging.
