6 - 8 medium potatoes, cubed
1/3 cup fresh lemon juice (about 2 and 1/2 lemons)
1/2 cup olive oil
2 tsp salt
1/2 tsp pepper
1 1/2 tsp dried oregano, dill or basil
2 - 4 garlic goves minced
hot water
chopped fresh parsley

Directions:
Directions:
Toss together the potatoes, lemon juice, oil, spices and garlic in a deep flat pan (approx. 8 x 12 in.) Add water to cover. Bake uncovered for about 1 1/2 hrs at 450 degrees F. Stir every 20 minutes, adding more water if necessary to prevent sticking. During the last 20 minutes allow the water to evaporate being careful not to let the potatoes burn. Sprinkle on parsley and feta or parmesan cheese.
