Ingredients: 1 3/4 cup flour 1 3/4 teaspoon baking soda 1/2 teaspoon salt 8 tablespoons unsalted butter, at room temperature 1/2 cup light brown sugar, packed 1/2 cup granulated sugar 1/2 cup creamy peanut butter 2 large eggs 1 teaspoon vanilla 12 ounces chocolate peanut butter cups or 1 pkg. mini cups, chopped

Directions:Preheat oven to 325. Spray a 9x9 inch baking pan with nonstick cooking spray. In large bowl, whisk together the flour, baking soda, and salt until evenly combined. Set aside. In a standing mixer, beat together butter, both sugars, and peanut butter until light and creamy about 3-4 minutes. Add eggs one at a time, mixing on low between each addition. Add vanilla and mix on low until fully blended about 1 minute. Add dry ingredients and mix on low just until combined. Stir in peanut butter cups. Pour batter into prepared baking pan. Bake until the middle is just set 26-28 minutes. If pan is 8x8 bake 4-6 minutes longer. Allow bars to cool completely in pan. Slice and serve. |

Notes: Peanut butter cups were created Nov 15, 1928 by H.B. Reese, a former dairy farmer and shipping foreman for Milton S. Hershey. After his third attempt to start his own company, he created the peanut butter cup in his basement.
The mini peanut butter cups can be purchased in an unwrapped version. This makes it much easier! I searched for a recipe with peanut butter cups for a long time because it is my son's favorite candy.
