1 cup butter, softened
1/2 cup powdered sugar
1/4 tsp. salt
2 tsp. vanilla
1\2 cup cornstarch
2 cups flour
1/2 cup finely chopped nuts. (use your favorite)
1 1/2 cups powdered sugar, for coating
Directions:
Directions:
1. Preheat oven to 350ºF. In a mixing bowl with paddle attachment, mix butter on medium speed until creamy. Blend in 1/2 cup powdered sugar and salt. Mix in vanilla.
2. Sprinkle cornstarch over mixture, then with mixer set on low speed, slowly add the flour or else it will fly over everything. Whatever, if you like snow, go for it. Stir in nuts.
3. Scoop dough out 1 Tbsp. at a time and roll into balls ( I use a scoop), then place balls on ungreased baking sheets and bake in preheated oven for 13-15 minutes, until bottom edges are lightly golden. (If you have trouble with spreading, stop over eating) No really just put the dough in the refrigerator for an hour it should help.
4. Remove from oven and allow to cool several minutes. Then while cookies are still warm, roll them in the powdered sugar.
5. Place on wire rack to cool. Once cooled roll in powdered sugar again to coat them generously.
6. Store in airtight container.
