2 cups all-purpose flour
1 tsp fine sea salt
½ tsp baking soda
1½ sticks unsalted butter, softened
¾ cup packed light brown sugar
¾ cup granulated sugar
2 large eggs
1½ tsp pure vanilla extract
2 cups bittersweet chocolate chips or chunks
1 cup classic Chex Mix, plus more for topping

Preheat the oven to 375º

Line two large, rimmed baking sheets with parchment paper.

Combine the flour, salt, and baking soda in a bowl. Set aside.

In the bowl of a stand mixer fitted with the paddle attachment, beat the butter, brown sugar, and granulated sugar on medium-high speed until light and fluffy, about 2-3 minutes. Scrape down the sides of the bowl as necessary. Reduce the speed to low and beat in the eggs and vanilla until just combined, scraping down the sides of the bowl as necessary.

Slowly add the flour mixture and beat until just incorporated.

With speed still on low, add the chocolate chips and ¾ cup of the Chex Mix until just incorporated.

Using about 3 tbsp of the dough at a time, roll the dough into balls. Place the balls onto the baking sheets about 2½-3 inches apart. Use the palm of your hand to gently press the cookies into 2 inch discs. Crush some more Chex Mix on top of the cookies and gently press in.

Bake until the edges are lightly browned but the center still remains soft, about 11-12 minutes.

Transfer to a wire rack to cool completely.

This is one of the first quarantine bakes that I did. I'm pretty sure the recipe actually originated with Chrissy Tiegen and I saw it on Facebook. Very yummy cookies!
