1 box lemon flavored cake mix
1/4 c. water
2 eggs
1/4 c. soft butter or margarine
1/4 c. brown sugar; packed
1 c. flaked coconut (optional)
1 c. chopped dried apricots
Lemon Glaze

Directions:
Directions:
Heat oven to 375. Combine half the cake mix, water, eggs, butter and brown sugar in mixing bowl; mix thoroughly. Blend in remaining cake mix. Stir in coconut and apricots. Batter will be very thick and sticky. Spread in greased and floured sheet pan. (15 1/2x10 1/2x1 inch).
Bake 20 to 25 minutes. While warm spread with Lemon Glaze. cut into bars.
Lemon Glaze: 2 cups powdered sugar, enough lemon juice to spread easily, can add just a little water.

For those that just can't bear to eat COCONUT, it can be omitted and still is very good. I make it without a lot, but have to say it's much better with.
