Ingredients: 1 cup white sugar 1 cup brown sugar ½ cup butter-softened 3 eggs About 1½ peanut butter 2 tsp baking soda 1 tbsp vanilla 4½ oatmeal 1 cup M and M's 1 cup chocolate chips

Directions:MIX: first 5 ingredients together. Add eggs 1 at a time. Mix well. Add baking soda and vanilla and mix well again! ADD: oatmeal M and M's chocolate chips MIX ; well. Use a small cookie or ice cream scoop and put dough on cookie sheet. Flatten with a fork. Bake about 10-12 minutes at 350º. Remove when cool. |

Notes: The reason these cookies are called Refugee cookies is because they were given out to Refugees when they arrived in Utah. I imagine this was done because of filling ingredients as well as something sweet! Welcome Dear Refugees! A friend of ours would make large batches of these cookies once a week and distribute them! When I make them, I feel like I am honoring my wonderful pioneer heritage-both women and men. Their courage and determination has inspired me for years. I also think of the sweet and impressive refugee families we have helped over the years, especially at Christmas time. They also show so much courage and are doing great things!
I usually make them around the 24th of July-Pioneer Day in Utah!
