1/2 lb bacon fried & crumbled
1/4 lb of deli swiss cheese, finely chopped
3 Tablespoons of chopped chives
black pepper
8 to 10 eggs (depending on size)
2 Tbsp melted butter

Directions:
Directions:
Preheat oven to 375 degrees.
Mix together the chopped cheese, bacon, chives and few grinds of black pepper. In another bowl beat the eggs.
Then brush your mini muffin tins for 24, with melted butter. Using a teaspoon, fill the mini muffin cups halfway with the cheese mixture. Using a ladle, fill the mini muffin cups, to just below the edge with the beaten eggs. Bake until golden, about 12 minutes. Remove and let cool.
