6 cups uncooked oatmeal (do not use instant)
3 cups all purpose flour
2 cups vegetable shortening
1 1/2 cups brown sugar
1 1/2 cups granulated sugar
1 cup shredded coconut
1 cup chopped pecans or walnuts
1 cup raisins
1/4 cup water
4 large eggs
1 tbsp. cinnamon
2 tsp. vanilla extract
2 tsp. baking soda
1 tsp. salt

1. Preheat oven to 350ºF.
2. Grease 2 or more cookie pans.
3. Combine sugar and shortening mix until thoroughly mixed.
4. Combine vanilla, water, and eggs. Beat until light and fluffy.
5. In a separate bowl, combine all of your dry ingredients.
6. Add this mixture to first mixture and mix until its completely blended.
7. Fold in oats, raisins, coconuts, and walnuts or pecans. Mix well.
8. Spoon cookies onto a greased cookie sheet. They should be about 2 to 3 inches apart. Flatten the rounded cookies with a butter knife.
9. Bake for 12 to 15 minutes. Cookies should be lightly browned.
