1/2 c. dark brown sugar; packed
2 T. Cajun seasoning
2 T. salt
1 T. lemon-pepper
2 T. worcestershire sauce
1 large Brisket
Hickory wood chips

Directions:
Directions:
Combine first 5 ingredients. Place brisket in large, shallow pan. Spread sugar mixture evenly over both sides of brisket. Cover and refrigerate 8 hours or overnight.
Soak chunks in water 1 hour.
Prepare charcoal fire in smoker; let burn 15 -20 minutes.
Drain chunks, and place on coals. Place water pan in smoker; add water to pan to depth of fill line.
Remove brisket from marinade; place on lower food rack. Pour remaining marinade over meat. Cover with smoker lid.
Cook 5 hours or until thermometer inserted in thickest portion registers 170.

Mark has done these briskets for us to use for the "After the Reunion parties". This Christmas Mark's family gave Frank a Smoker. Guess we'll have to do our own Briskets now!!! Hope they'll be as good.
