1/4 cup fresh lime juice
1/4 cup tequila
1 or 2 fresh jalapeno peppers, seeded & minced (wear gloves to prevent irritation)
2 Tbsp triple sec or orange juice
1 Tbsp vegetable oil
1 Tsp ground coriander
4 sprigs of fresh cilantro - chopped
1 garlic clove, halved
1/4 Tsp salt
4 boneless chicken breasts (can be skinless)

Directions:
Directions:
1. Combine the lime juice, tequila, jalapeno, triple sec, oil, coriander, cilantro sprigs, garlic halves, and salt in a zip loc plastic bag. Add the chicken. Refrigerate, turning the bag occasionally for 30 minutes.
2. Spray a nonstick ridged grill pan with nonstick spray and heat over medium heat. Grill the chicken, turning once, until cooked through. 5 to 6 minutes on each side.
3. Serve chicken with sour cream and guacamole.

You can use a George Forman grill or your BBQ grill for the chicken instead of the grill pan.
