1 egg
2 T. safflower or canola oil
2 T. honey
2 T. molasses
3/4 C plain yogurt
1 tsp. baking soda
1/4 tsp. salt
1 c. 100% Bran cereal
3/4 C whole wheat flour
1/4 C. water

Directions:
Directions:
Mix together egg, oil, honey, molasses and yogurt. Then add baking soda, salt, bran, flour and water, and mix. Use foil muffin holders or nonfat spray. Bake 30 minutes at 350.
Variations: Add 1 or more of the following: 1/2 c. raisins, 1.2 cup sunflower seeds, 1 cup mashed ripe banana, 1 cup frozen or fresh blueberries, 1 cup finely chopped apple; or 1/4 tsp. nutmeg, 1/2 tsp. cinnamon and 1/2 c. chopped apple.
