1 cup yellow cornmeal
1 cup flour
1/4 cup sugar
4 tsp baking powder
1/2 tsp salt
1 egg, beaten
1 cup buttermilk*
1/4 cup oil

* I make my own by adding 1 tbsp vinegar to 1 cup milk

Directions:
Directions:
Heat oven to 425 degrees. Pour oil into large iron skillet and place in the oven.

Mix cornmeal, flour, sugar, baking powder and salt in bowl. Add egg and buttermilk and beat about 1 minute. Add heated oil and stir until blended. Pour into hot skillet and bake for 20 - 25 minutes. Serve hot.
