1 cup sugar
scant cup ghee
1 egg
1 tsp vanilla
1 cup persimmon pulp, mix with 1 tsp soda
1 cup buckwheat flour
1 cup all-purpose flour blend
⅓ cup ground almonds
2 Tbsp flax and chia seeds, ground
3 Tbsp psyllium husks
½ tsp salt
½ tsp baking powder
½ tsp nutmeg
½ tsp cloves
½ tsp cinnamon
½ cup chopped nuts, optional
½ cup raisins, optional

Directions:

Cream wet ingredients, then whisk in dry ingredients. Drop by teaspoonful onto greased cookie sheet and bake for 12-15 minutes in oven preheated to 180ºC/350ºF.

It's not often I find persimmons in the shops; however, when I do, this is what I make with them. This is a recipe given to my Grandma Baker by a dear friend, many years ago. It's timeless and for me, always tastes better without the raisin and nuts.
