1 cup of shortening (may use 1/2 butter or margarine)
1 cup brown sugar (may use 1/2 white sugar)
1 egg
1 teaspoon vanilla

1 cup of all purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
2 1/2 cups quick 3 minute oatmeal

Directions:
Directions:
Preheat oven to 350º.

Cream shortening and sugar, add beaten egg and vanilla.

Add dry ingredients and mix well. Chill cookie batter for a few hours.

Roll out on floured surface. Place on cookie sheet covered with parchment paper.

Bake for 8 to 10 minutes. Be careful they brown quickly. Cool on racks.

Linda's husband Tom Rumford had a family recipe for oatmeal cookies. She shared with Aunt Lou, Grandma Aggie and Mom.
