1 cup diced cooked chicken 1 can cream of chicken coup 1 cup chopped celery 2 Tbls lemon juice 1/4 cup chopped red pepper 1 cup cooked rice 3/4 cup mayonnaise 1 Tbls. grated onion 3 hard boiled eggs - diced.
Gently fold all ingredients together. Place in a buttered baking dish & top with cracker crumbs & dot with butter.
Bake @ 350 for 30 min.
