1 cup peanut butter (use peanut butter with no added sugar, if possible)
¾ cup sugar
½ cup Splenda sweetener
1 egg

Combine all ingredients and mix well. Scoop dough onto baking sheet in equal portions. (Use a small scoop, if available.) Bake at 350 degrees for 12 minutes or until done. (Cookies should feel dry when touched lightly.) Cool on baking sheet for 3 to 5 minutes. Move to cooling rack to cool completely.

The whole batch of dough equals: 2210 calories, 150 g fat (29.5 g saturated fat, 0 g trans fat), 1265 mg sodium, 70 g protein, and 184 g carbohydrate. To figure the nutrition per cookie, divide the total by number of cookies you bake from the batch. Usually get about 32 small cookies, so each cookie would equal 69 calories, 4.6 g fat (.9 f saturated fat, 0 g tran), 40 mg sodium, 2.2 g protein, and 5.75 g carbohydrate
