2 cups freshly grated zucchini/courgette
¾ cups butter or ghee
1½ cups brown sugar
1 egg
1 tsp vanilla
1 cup all-purpose flour blend
3 cups gluten-free oats (more flour or buckwheat flakes)
1 tsp salt
1 tsp bread soda
3 tsp allspice or a mix of cinnamon, nutmeg and ginger
1 cup nuts, chopped

Directions:

Preheat oven to 190ºC/375ºF and grease or line a cookie sheet or other baking tray. Mix all ingredients in a large bowl. If using flour in place of oats, mix until you achieve a cookie batter consistency. Drop by teaspoonful onto prepared baking tray; bake for 12-15 minutes, do not over bake. Remove from the oven and cool for a few moments before placing cookies on a wire rack to cool completely.

My Mom made these when I was growing up, they're a nice alternative to the likes of banana bread or other sweet, quick-breads and they are a curious, soft biscuit. A firm favourite growing up, I enjoy making them and eating more than my share!
