• 1 c shortening (Crisco)
• 1 c packed brown sugar
• 1 c sugar
• 2 eggs
• 1 ½ tsp vanilla
• 1 ½ c flour
• 1 tsp baking soda
• 1 tsp salt
• 3 c instant oatmeal
• 1 pkg about 2 c chocolate chips
• Optional: Instead of 2 c chocolate chips, I like to use 1 c chocolate chips and 1 c butterscotch chips, or 1 c white chocolate chips and 1 c craisins

Directions:

1. Cream together shortening, sugar and brown sugar until mixture is light.
2. Add eggs and vanilla and mix until combined.
3. In a separate bowl, whisk together flour, baking soda, and salt.
4. Slowly add the dry ingredients and mix until combined.
5. Mix or stir in oatmeal.
6. Stir in chocolate chips.
7. Bake at 350° for 11 minutes.

To double recipe, double all ingredients except use 5 cups of oatmeal.

My go-to cookie recipe! They are also the cookies my mom makes the most for us. Best served with a cold glass of milk or cup of coffee. :) Every time I made them growing up, my dad would tell me they are the best cookies he’s ever had. :)
