1 large pkg corn tortillas
1 large onion diced
2 lbs ground beef cooked
4 - 5 cups grated cheddar cheese
4 - 5 cans red enchilada sauce

Directions:
Directions:
Preheat oven to 350.
Spray baking dish with non-stick spray. Put small amount of sauce on bottom of pan. Layer tortillas, ground beef, onion, cheese and sauce. Do several layers ending with a layer of tortillas. Cover top with sauce and cheese. Cover and bake 35 minutes uncover and bake 10 more minutes or until hot and bubbly.

These are much easier than the traditional rolled version and tastes the same. I use the hot enchilada sauce for a little heat.
