1 cup sugar
1 1/2 allspice
3/4 tsp. salt
1 stick cinnamon
1 3/4 cup apple cidar vinegar
3/4 cup water or beet juice
4 cans (16 oz. each) beets - drained

Directions:

Combine all ingredients except the beets - boil, then simmer for 15 minutes. Pour hot liquid over beets

After trying several recipes, I made adjustments with different ingredients and my family decided this as the one. Both of my sons love this and I always have a jar in my refrigerator all summer long.
