2 slices bacon, cooked and cut into small pieces or crumbled
1/4 cup chopped walnuts
Feta cheese, crumbled, about 1/4 cup or as desired

1/4 cup light olive oil
2 tbsp white wine vinegar (Tarragon)
1 tsp salt
1 tsp chopped garlic
1-1 1/2 tsp sugar
Fresh ground pepper, generous sprinkling

Put first 5 ingredients in salad bowl. Chill until ready to serve.

Whip dressing ingredients together with stick mixer or whisk briskly. Toss about 1/2 of the dressing with salad ingredients to coat spinach leaves. Serves 2-3.
