"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste
This recipe for Southern Fried Chicken, by Ellen Marenger, is from The Lefa L. Seran SNF Cookbook,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
Cut up chicken and place pieces in milk. Transfer to egg; dip and then coat in seasoned flour. Heat oil in frying pan (best in cast iron skillet). Cut onion in four pieces and put in oil. Let heat to desired temperature. Cook chicken for 30 minutes on each side. Makes about 8 servings.
