2 1/2 cups chopped dates
1 cup sugar
1 cup water
1 cup chopped mincemeat

1 cup shortening
1 cup brown sugar
3 eggs, well beaten
3 1/2 cups flour (just enough to make stiff dough)
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp vanilla or almond extract

Combine all filling ingredients in a saucepan and cook for 10 minutes on medium-low heat. Set aside to cool.
Sift flour, salt and baking powder, set aside. Cream sugar and shortening. Add beaten eggs one at a time, alternating with flour. Add extract and mix well. Roll out onto a rectangular baking sheet. Spread filling evenly on top. Roll up like a cinnamon roll and refrigerate overnight. Slice and bake at 375 or until golden brown.
