Italian Lemon Cookies Recipe

1 cup (2 sticks) of butter, melted and cooled
2 eggs
2 lemons (yellow portion of rinds finely grated for zest)
1 cup ricotta cheese
1 tsp. baking soda
1 tsp. (heaping) baking powder
½ tsp. salt
4 cups flour

glaze
1 cup confectioners sugar
Lemon juice
Sprinkles or nonpareils

Directions:
Directions:
1. Heat the oven to 350ᵒ
2. In a large bowl, mix butter, sugar, eggs, zest of 2 lemons, and ricotta until creamy
3. Add baking soda, baking powder, and salt and mix well
4. Add flour, one cup at a time. If the dough is still sticky after all the flour has been mixed in, add additional flour ½ c. at a time until the dough is smooth
5. Remove dough from the bowl onto a floured counter or baking mat and form into a loaf.
6. Cut off a chunk of dough and roll into 4-5 inch long strips (about the width of a finger). Make into a knot, tucking the ends of the knot underneath
7. Bake for 10-12 minutes, or until the bottoms of the cookies are golden brown. Cool on a cooling rack

For the glaze:
1. Once the cookies have cooled, slowly mix lemon juice into 1 c. confectioners sugar until it creates a thin glaze.
2. Brush glaze on top of cookies and decorate with sprinkles or nonpareils
