1 1/2 cups all-purpose flour
1 tsp baking powder
1/8 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1 1/2 cups old fashioned oats
1 cup chopped walnuts (think I used pecans, instead)
1/2 cup margarine melted (I used I Can't Believe It's Not Butter Vegan)
1/2 cup pure maple syrup
1/4 cup sugar
2 tsp pure vanilla extract

I added 1/4 cup raisins, 1/4 cup craisins, and 1/4+ cup applesauce, to moisten, to this basic recipe.

Preheat over to 375. In large bowl, sift or mix well dry ingredients. Stir in oats, nuts, raisins, and craisins, if using.

In medium bowl, combine remaining ingredients except apple sauce. Add to dry ingredients. Add applesauce for moisture, if needed. Mix well.

Drop cookie dough by tablespoonful onto ungreased baking sheet. I usually line with parchment paper. Press down slightly with a fork. Bake until browned, about 12 minutes, but may be longer if using extra ingredients because of the added applesauce. Cool cookies slightly before transferring to a wire rack to cool completely.
Store in an airtight container. I keep them in the fridge (no preservatives).
