Ingredients:  
4 lb. lamb, cubed
1/4 cup olive oil
1/2 cup red wine
1 lemon squeezed and sliced
2 cloves garlic, minced
1 tbsp oregano
1 red onion, sliced
Salt and pepper to taste
1 bay leaf, optional
Vegetables (red and green peppers, onion, whole mushrooms, etc.)

Directions:
Directions:
Mix olive oil, wine, lemon, garlic, oregano, onion, and salt and pepper. Toss with lamb and marinate overnight. Skewer lamb with vegetables. Grill on low heat approximately 30-40 minutes or until lamb is medium-rare.
