8 chicken breasts;
8 oz carton of sour cream;
3 T of poppyseeds;
2 cans of cream of chicken soup;
2 cups of crushed Ritz crackers;
1-1/2 sticks of margarine (but I have successfully used 1/2 stick and think it's better... and certainly more healthy).

Directions:
Directions:
Season and cook the chicken breasts, bone it (if needed), cut into bite size pieces and place it into a buttered 9 x 13" casserole dish.

Mix soup and sour cream, heat, and pour it over the chicken.

Mix poppyseeds and crushed crackers and cover the top of the casserole with it.

Melt the margarine and pour it over the top of the crackers.

Bake at 350F for 30-40 minutes, until bubbly.
