6 English muffins, split
12 eggs
8 oz. sour cream
1 c. shredded cheddar cheese
1 lb. sausage, ham or bacon, browned

Additional toppings:

Mushrooms, onions and green peppers

Directions:
Directions:
Grease a 3 qt. rectangle baking dish. Arrange split muffins in bottom of dish, overlapping if necessary. Set aside. In a large bowl, beat eggs lightly with a whisk until combined. Add in sour cream and mix well. Stir in meat, and additional vegetables if desired. Pour egg and meat mixture over the muffins and press down lightly with the back of a spoon to moisten muffins. Sprinkle with cheese, cover and chill overnight. Bake uncovered in a preheated oven at 375 for 35-40 minutes or until eggs are set. Let stand for 10 minutes before cutting and serving.
