4c flour
1c sugar
1 lb. butter
4 egg yolks
1 whole egg
1 tsp grated lemon rind
1 tsp vanilla

Directions:
Directions:
Preheat oven to 375º
With an electric mixer, beat together the sugar and butter until light and fluffy.
Add eggs, lemon rind and vanilla.
Then, mixing with a spoon, slowly add the flour.
Place dough onto a floured board or mat and roll dough with a rolling pin.
Cut out using cookie cutter shapes.
Cook for 8-10 minutes.
Cookies should be baked until the edges are lightly browned.

*** for variation, cookies can be half dipped in chocolate or raspberry jam and then rolled in chopped nuts.
